含硫氨基酸衍生物的研究进展

摘要:
含硫氨基酸衍生物主要由三个常见的含硫氨基酸——蛋氨酸,半胱氨酸,胱氨酸衍生转化而来,可以在体内参与转甲基,转硫基等生化过程,同时也具有抗氧化,清除自由基等功能,在医药和食品中具有重要的应用价值。含硫氨基酸衍生物产品众多,其中最具代表性的是N-乙酰-L-半胱氨酸,谷胱甘肽,腺苷蛋氨酸。本文就这三个衍生物的研究进展作一简要综述。

Abstract:
The derivatives of the amino acids containing sulphur synthesizedfrom three sulphydry amino acids such as methione, cysteine and cystine play an important role on the methylation,sulphuration, detoxication and ,antioxidation and are very useful in pharmaceutic and food industry. There are many derivatives of these amino acids,but N-acetyl-L-cysteine,gluthathione and adenosylmethionine are very useful. This is a brief summary of these three derivatives.
