赤眼鳟肉质氨基酸成分研究初报

摘要:
测定了赤眼鳟肉氨基酸组成.结果表明,赤眼鳟肉含有17种氨基酸,其中赖氨酸含量最高,总氨基酸中的必须氨基酸的质量分数为57.8%.

Report on Amino Acid Composition in Meat of Squaliobarlus curriculus
Abstract:
The amino acid composition in meat of Squaliobarlus curriculus was determined. The result showed that there were 17 amino acids in the meat,8 of which were essential to human body and their contents amounted to 57.8% of the tolal. Lys content was higher than the others.
