金属离子对黑米花青苷色素吸收光谱的影响

摘要:
以黑糯B糙米皮为实验材料,用1.5mol/L盐酸-95%乙醇(V/V:15/85)溶液提取黑米花青苷色素(BRAP),采用紫外可见分光光度法研究了11种金属离子以及(NH4)1+离子对BRAP的作用.结果表明,未加离子条件下色素溶液可见光区λmax535nm,紫外光区λmax280nm,加入Al3+、Fe3+、Fe2+、Cu2+、Mn2+、Zn2+、Sn2+对其吸收光谱有显性影响.其中Al3+、Fe3+使535 nm特征吸收峰发生蓝移,Sn2+使其发生明显红移;Al3+,Fe2+,Mn2+,Zn2+在535 nm附近有增加ABS值作用,Fe3+有减小ABS值作用;延长作用时间,Cu2+对BRAP吸收光谱的影响表现为λmax535nm发生蓝移,ABS值减小.

Influence of Metal Ions on the Absorption Spectrum of Black Rice Anthocyanin Pigment
Abstract:
The effect of 11 metal ions and (NH 4) 1+ on black rice anthocyanin pigment(BRAP) was investigated by UV-VIS spectrometry. The pigment solution without metal ions showed the λmax535nm in VIS-region and λmax280nm in UV-region. When Al 3+ ,Fe 3+ ,Fe 2+ ,Cu 2+ ,Mn 2+ ,Zn 2+ and Sn 2+ added separately, the solution was obviously influenced. Among them, the Al 3+ and Fe 3+ made the characteristic absorption peak move to blue λmax 535nm and the Sn 2+ made it red shift. When Al 3+ ,Fe 2+ ,Mn 2+ ,Mn 2+ and Zn 2+ were added in the pigment solution respectively, the ABS value near 535nm was increased, but Fe 3+ made it reduce. Extending the time of Cu 2+ reaction, the pigment solution λ max 535nm shift to blue and the ABS value reduced.
