陕西三种特种稻米氨基酸及品质分析

摘要:
以陕西洋县产茉莉香米、红香米和绿香粳米等3种特种稻米为材料,分析了氨基酸及其它品质指标.结果表明,茉莉香米、红香米和绿香粳米均含有17种氨基酸,氨基酸总含量(mg/100 g)分别为7300、7270、7490;除Trp外,7种必需氨基酸占氨基酸总量分别为34.6%、34.5%、34.8%;Lys含量(mg/100 g)分别为550、520、530;粗蛋白质含量分别是9.94%、9.23%、8.52%;Cu 含量(mg/100 g)分别是0.62、0.94 、0.79;Zn 含量(mg/100g)分别是1.99、1.75、2.02;Fe含量(mg/100 g)分别是1.55、3.70、4.50;直链淀粉含量分别是15.6%、3.7%、 15.1%;胶稠度分别是33 mm、40.6 mm、78 mm;糊化温度分别是 6.1 级、6.8 级、7级;水分含量分别是11.27%、11.55%、12.52%.这3种特种稻品质较优,具有推广价值.

Assy of Amino Acid and Other Quality of the Three Kinds of Particular Rice in Shaanxi
Abstract:
The contents of amino acid,protein, mineral nutrient, amylose, gel consistency and gelatinization temperature of three kinds of particular rice cultivated in Yangxian were analysed. The results showed that the amino acid content in Moli rice, Red rice and Green rice were 7300mg/100g,7270mg/100g and 7490mg/100g respectively. Seven essential amino acids (except Trp) made up 34.6%,34.5% and 34.8% of the total contents. Content of protein was 9.94% in Moli rice,9.23% in Red rice and 8.52% in Green Rice. Content of copper was 0.62mg/100g,0.94mg/100g and 0.79mg/100g respectively;Zinc content was 1.99mg/100g,1.75mg/100g,2.02mg/100g;Iron 1.55mg/100g,3.70mg/100g,4.50mg/100g;amylose 15.6%,3.7%,15.1%;gel consistency 33mm,40.6mm,78mm;gelatinization temperature 6.1 grade,6.8grade and 7grade respectively.
