桂花色素的提取及其稳定性的研究

摘要:
对桂花色素的提取及其稳定性进行研究,结果表明:桂花色素既溶于极性溶剂,也溶于非极性溶剂;色素的λmax是323nm、330nm、459nm;色素在酸性条件下稳定性良好;对光、热(20~100℃,1 h)耐性较好;色素对Cu2+较敏感,而Al3+、Mg2+、K+、Na+、Zn2+、Ca2+对其无不良影响;含氧酸根阴离子HPO3-对色素影响较大;色素抗氧化、抗还原能力较好;食品添加剂对色素稳定性影响较小.

Study on Extraction and Stability of Pigment from Osmanthus
Abstract:
The extraction and stability of the pigment of Osmanthus were studied. The result showed that the pigment had good solubility in polar solvent and nonpolar solvent. Its λmax was 323nm,330nm and 459nm. It could be stabilized between pH=2~7.It was relatively steady to hot and light. Its color was changed by Cu~ 2+,but the pigment was not harmfully affected by Al~ 3+、Mg~ 2+、K~+、Na~+、Zn~ 2+and Ca~ 2+.It was less stable to negative ions HPO_3~ 2-, more stable against oxidizing agent(H_2O_2) and reducing agent . The food additives had certain in fluence on the pigment.
