以五种黑米皮为实验材料,采用优化方法,确定了黑米花青苷类色素测定实验条件.结果表明:黑米皮脱脂后,80℃、酸性乙醇(1.5mol/LHCl-95%乙醇= 15/85)、60 min重复提取两次,可实现95%以上的色素溶出.提取液选取1 cm比色皿、与535 nm波长下测定ABS值,计算色价(E 1% 1cm,λ=535nm ),作为一种黑米花青苷类色素含量测定方法,可用于黑米品质分析. |

Study on Determination Method of Anthocyanin of Black Rice |

Abstract: |
The optimum conditions for determination of anthocyanin of black rice were studied by using 5 kinds of black rice. The result indicated that in the lipid-removed black rice more than 95% of the pigment could be extracted in HCl/EtOH (15/85) at 80℃ for 60min in twice. The extract could be measured for the pigment content by ABS ralue under the wavelength of 535nm. |
